苦荞的营养与功能成分研究进展

Research Progress of Chemicals in Tartary Buckwheat

  • 摘要: 苦荞是蓼科荞麦属的一类假谷类作物,非常适合在山区等极端环境种植。与普通谷物相比较,苦荞中含有较多的营养与功能成分。目前,苦荞及其产品的精加工与深加工等开发利用程度依然较低,因而有必要充分了解苦荞营养与功能成分的研究现状及进展。本文综述了近年来国内外学者对于苦荞中淀粉、膳食纤维、蛋白质、维生素、多酚和手性肌醇等成分的研究进展,指出未来需要进一步加强苦荞化学成分的基础研究。本文研究结果对于提升苦荞及其制品的质量与安全,促进苦荞产业健康发展具有重要意义。

     

    Abstract: Tartary buckwheat is a kind of false cereal plant in the genus buckwheat of Polygonaceae. As a kind of functional food crop for sustainable development, it is very suitable for extreme environment planting such as mountain area, especially with more functional components. At present, the development and utilization of Tartary buckwheat and its products are still relatively low. Therefore, it is necessary to fully understand the research status and progress of Tartary Buckwheat nutrition and functional components. In this paper, the research progress of starch, dietary fiber, protein, vitamin, polyphenol and chiral inositol in Tartary buckwheat was reviewed. In the future, it is necessary to further strengthen the basic research on the chemical composition of Tartary buckwheat. The research results are of great significance for improving the quality and safety of Tartary buckwheat and its products and promoting the healthy development of Tartary buckwheat industry.
