摘要: 对绿茶中茶红色素的提取工艺条件进行了研究筛选, 采用正交方法, 通过对反应体系的pH值、氧化温度和反应时间三个因素进行正交试验分析, 确定了适宜的茶红色素提取工艺。结果表明: 氧化温度55℃, pH 9.0, 反应时间3h条件下的产物效果较好。Abstract: The extraetion conditins of tea red pigment from green tea was studied by orthogonal test in this paper.
